15 fresh blueberries
2 ounces white rum
1 ounce Vanilla Bean Simple Syrup*
1 ounce freshly squeezed lime juice
10 mint leaves
Club soda
In a glass muddle blueberries, Vanilla Bean Simple Syrup, lime juice and mint. Add rum and stir. Fill glass with crushed ice and top off with club soda.
Makes one serving.
*To make Vanilla Bean Simple Syrup:
Step 1: Cut vanilla bean in half and split down the middle.
Step 2: Scrape vanilla beans out of the pod and add to a saucepan.
Step 3: Add ½ cup water.
Step 4: Add ½ cup sugar.
Step 5: Add empty vanilla bean pod.
Step 6: Bring ingredients to a boil and cook until sugar dissolves.
Step 7: Let cool and remove vanilla bean pod.
