Matzo Brei

A traditional Ashkenazi dish

A dish of Ashkenazi Jewish origin, Matzo Brei can be savory or sweet.

Matzo Brei is typically made from dry matzo briefly softened in hot water or milk, then mixed with eggs and pan-fried in butter, oil or schmaltz.

For those looking for a twist on the dish, one can make Matzo Brei omelet-style, mixed with meat and other foods, or topped with sauces such as applesauce, salsa or preserves.

Ingredients

3 tsp. oil
4 matzos
4 egg whites
Onion powder to taste
1/4 tsp. kosher salt
Dash of black pepper

Directions
1. Coat a large nonstick skillet with 1 tsp of oil
2. While the skillet heats break matzo into a bowl of cold water
3. Add egg whites and seasonings
4. Spoon a portion of the mixture into the skillet, making a large pancakes out of the batter
5. Brown both sides.
6. Repeat until all your Matzo Brei batter is done.
