Little Neck Clams-o-Love Over Pomme Frites

Let the bivalves that gave our neighborhood its name cast a culinary spell on you and your loved one this Valentine's Day

Nothing says, "I love you," like our very own Little Neck clams sautéed in a white wine sauce — except maybe when these same clams come with french fries.

Little Neck Clams-o-Love Over Pomme Frites

Ingredients
1 small onion
2 teaspoons of minced garlic

3 cups of dry white wine
3 cups of olive oil
1 dozen Little Neck Clams

1 tablespoon of Parsley

Instructions
1. Sauté garlic and onions in 2 tablespoons of olive oil

2. Add wine to the pot, lower the heat and let everything simmer for 3 minutes.
3. Add clams to the mix, and simmer over a medium heat until the clams open, throwing away any unopened clams that don't open after about 10 minutes of simmering.

4. Meanwhile in a separate pot cook french fries in the remaining olive oil, and salt to taste.

5. Once the fries are nice and crispy throw them in a strainer, and drain the excess oil.

6. Put fries in a large bowl, and dump the clams along with all of the white wine juices on top of them.

7. Garnish with parsley.
