St. Patty's Recipe: Potato Soup

Try this recipe out for the upcoming holiday.

Yesterday, we brought you a recipe for  courtesy of our New Englander friends at Norton Patch. Today, courtesy of Oak Lawn Patch, we're serving up a recipe for potato soup. Since the Irish community of Bayside has such a , we're hoping to see some great variations on the recipe posted in the comments section.

Pilgrim Faith Church Cookbook

6 lg or 8 med. potatoes, peeled and cut up

1 lg onion, diced

1/3 stick margarine or butter

Milk

Salt and pepper

Cook potatoes and onion together in a large pan with just enough water to cover. If necessary add water while cooking. Do not drain when done. Whip with hand beater until it resembles mashed potatoes. Add butter or margarine. Beat until it is melted. Add milk a little at a time, until desired thickness. Salt and pepper to taste.

*It may not be traditional, but this site's editor likes potato soup with grated cheddar cheese or sour cream.
